Spicy Shrimp with Coconut slices

This is a very delicious recipe of Shrimp with coconut slices that I experimented with and turned out yum! .It’s a no fail recipe when your tastebuds are craving for spicy seafood! The taste is enhanced by the marinated shrimp, coconut bits , curry leaves and  shallots .I used the frozen coconut slices that is easily available in any Indian grocery.  Now , how I arrived at this recipe : I usually marinate shrimp with  ginger garlic paste and spices and then shallow fry in the oil. Instead of shallow frying them which consumes so much oil,  fried the shallots and coconut slices  in a little oil and sautéed the marinated shrimp into it, this not also reduced the oil in the recipe but also turned out very tasty as well! Using coconut oil  gives a nice flavor .Hope you will try it out ..The full recipe is below ..:)

Sesame Ginger Chicken

What's for Dinner Moms?

(Sorry about the picture quality but my family helped my out by taking dinner pictures the other night. This is the best shot they had.)

We love Chinese food but it can be very expensive and you don’t always know what is in it. If we make it at home we can control the ingredients and how we cook it. More oil, less oil, steaming or baking it is up to us.

We started with the recipe for Sesame Ginger Chicken from the Food Network (click for link to recipe).  I encourage you to do make it your own. We had no oyster sauce, Thai chili sauce or fresh ginger so we left those out.
