Strawberry-Honey Agua Fresca

While thumbing through a summer issue of Real Simple magazine the other day, I found a little note about Agua Fresca and how you could blend watermelon, cucumber, or cantaloupe with lime juice and a little sugar, then strain and serve over ice. That reminded me of an Agua Fresca recipe I made a few years back. It’s made a little differently–I used strawberries and didn’t strain it. I also used honey instead of sugar. 

If you’re not familiar with Agua Fresca, it’s Spanish for “fresh water” and is a type of fruit drink that is served all over Mexico. Made from a combination of fruits, sugar, and water blended together, it’s a refreshing drink for spring and summer. I prefer using honey instead of sugar myself, but you can use either!

Fresh White Corn Polenta with Pan Fried Shrimps and Roasted Vegetables

Fresh corn season is here and, once again, I’m using it in all kinds of dishes. One of my favorite and easiest recipes using fresh corn is to cook it “polenta” style. Unlike the time consuming traditional polenta, which is made with dried cornmeal, this quick cooking version is lighter and so perfect for summer.
It can be served on its own, or with vegetables, as a vegetarian dish. It is also wonderful when served as a side dish with fish, meat or chicken.
In the recipe here, I’ve used this fresh and creamy polenta as a bed for pan fried shrimps, inspired by the Southern dish “shrimp and grits” (recipe for which can be found HERE). Adding roasted vegetables on the side, created a light, yet very filling, summer dish. Try it and enjoy.

Song Lyric Sunday Theme for 7/29/18

This Thing Called Life One Word at a Time

My hubby and I finally found another show to binge watch, and since neither of us feels very well, it has made for the perfect Saturday afternoon. The other thing that was rather perfect this week was how I came up with the theme. I was watching World of Dance and when one contestant was being scored, a song was playing. I immediately fell in love with the song and was able to come up with the theme and my song at the same time!

Don’t you just love technology these days? I was able to rewind the show and play it while asking Siri to name that tune. It took a couple of times, but she was finally able to tell me the song.
