My husband prepped this meal for me as a hint to where he was taking me on a surprise birthday trip: New Orleans! We use shrimp instead of crawfish as called for in original from myrecipes.com, but either way: A new favourite in our house.
Ingredients
Grits:
- 3 1/2 cups 2% reduced-fat milk, divided
- 1 1/2 cups fresh corn kernels
- 1 chipotle chile, canned in adobo sauce
- 1 1/2 cups water
- 1/2 teaspoon kosher salt
- 1 cup uncooked regular grits
- 2 ounces reduced-fat shredded cheddar cheese (about 1/2 cup)
- 3 tablespoons light sour cream
- Crawfish:
- 1 1/2 tablespoons all-purpose flour
- 2 teaspoons olive oil
- 1/4 cup finely chopped andouille sausage or kielbasa (about 1.5 ounces)
- 2/3 cup chopped onion
- 2/3 cup chopped green bell pepper
