Shrimp and Grits


My husband prepped this meal for me as a hint to where he was taking me on a surprise birthday trip: New Orleans! We use shrimp instead of crawfish as called for in original from, but either way: A new favourite in our house.



  • 3 1/2 cups 2% reduced-fat milk, divided
  • 1 1/2 cups fresh corn kernels
  • 1 chipotle chile, canned in adobo sauce
  • 1 1/2 cups water
  • 1/2 teaspoon kosher salt
  • 1 cup uncooked regular grits
  • 2 ounces reduced-fat shredded cheddar cheese (about 1/2 cup)
  • 3 tablespoons light sour cream
  • Crawfish:
  • 1 1/2 tablespoons all-purpose flour
  • 2 teaspoons olive oil
  • 1/4 cup finely chopped andouille sausage or kielbasa (about 1.5 ounces)
  • 2/3 cup chopped onion
  • 2/3 cup chopped green bell pepper
  • 1 tablespoon minced garlic
  • 2 teaspoons chopped fresh thyme
  • 1/4 teaspoon kosher salt
  • 2 teaspoons tomato paste
