Vegan Pineapple Upside Down Cake
I love pineapple upside down cake because they are so simple to make. No frosting to worry about. Just mix, toss it in the oven, turn it out and your done!
Note: This recipe makes one 9 inch round cake. So you would need to double it for a larger cake.
Set your oven to 350 degrees F. In a 9 inch round cake pan melt 3 tablespoons coconut oil in the oven. I use my 9 inch round glass casserole dish. I prefer glass for this because it bakes more evenly and prevents the brown sugar from burning. Spread the brown sugar over the melted coconut oil. Place pineapple rings over the brown sugar. (Maraschino cherries optional) Set aside.
Mix the almond milk and vinegar together in a small bowl. Set aside.
In a large bowl mix the flour, salt, baking powder, and sugar.
Add the baking soda to the…

Mini Victoria Sandwiches
Lately I have been binge watching old BBC murder mystery series, and one of the recurring themes, aside from the copious amounts of tea and beautifully manicured cottage gardens, are the town bake-offs. I have lost count of the number of people that have keeled over dead after eating a heaping forkful of Victoria Sponge. This, in turn, got me thinking about the fact that I had never actually tried a real Victoria Sponge, either making one or eating one, and so, from the safety of my own kitchen, I decided to experiment. I read through the dozen, or so, Victoria Sponge recipes found on the BBC website, and readily figured out that cake was equal parts butter, eggs, flour, and sugar. It also seems like the more traditional sandwich fillings are raspberry jam and whipped cream, but strawberry jam and buttercream are the more popular ones. I used strawberry…

Chocolate chestnut cake
Today a friend of mine is celebrating her birthday. As every year I’m planning on making her a cake as a surprise, or some kind of a dessert like cupcakes, but has to be something with chocolate. As she will be reading this post, I have to say I still don’t have an idea what I’m going to make, even though there is a master plan in action. The surprise is probably going to be in a day or two when we catch up, and I have to admit I can’t wait!
When it comes to birthdays, I love preparing cakes for my friends, sometimes I really don’t have time to do so, but I always do my best. Just the joy on their face when they see the surprise is worth the effort. I’ve been surprising people with cakes since high school and it’s something I won’t stop doing, because…

BLUEBERRY CRUMBLE COFFEE CAKE
As I mentioned before, one great food blogger I follow is Helen Fletcher. She is an expert baker, and also a natural teacher. Each of her posts is a detailed tutorial that allows even the most insecure baker (Sally raises her hand…) to feel comfortable to face a little baking challenge. A few months ago she blogged on a Blueberry Coffee Cake that had a nice twist to it, the inclusion of a crumb topping. I was intrigued. It turned out as a delicious, moist and tender cake, one that prompted Phil to grant me an unexpected compliment: “this is exactly the type of cake my Aunt Mildred would bake and we loved so much!” Can you grasp the full impact of those simple words put together? Me and his Aunt Mildred, joined in the same level of cake baking. I had to hold myself on the side…

Berry cake roll
Cake roll, jelly roll, cream roll or Swiss roll is an easy sponge cake filled with fruit, icing, jam or whipped cream. Even though the name suggests the cake originated from Switzerland it is believed that it originated in Austria in the 19th century. The first mention of a cake roll was actually in a journal published in Utica, New York in 1852. As the name changed for it over the years so did the number of new recipes emerge. Now it seems like every country has its own version of a cake roll, but the most famous is the Christmas log.
Nothing is better than eating cake in the summer, ok maybe eating ice cream, but still cooled down refreshing cake on a patio or in a patisserie will really set your mind at ease while you’re melting in the sun. Nowadays I’m just thinking on which cake to…
